Briouats Stuffed with Minced Meat and Vegetables



Ingredients & Method:

Spices:
  • A pinch of black pepper
  • A pinch of cumin
  • A pinch of ground chili
  • A pinch of paprika
  • A pinch of ground coriander seeds
  • Cinnamon
  • Fresh coriander and parsley
  • A pinch of salt
Vegetables:
  • 1 large green bell pepper
  • 3 carrots
  • 1 onion
  • 3 zucchini
  • 200g glass noodles (Chinese vermicelli)
  • 500g minced meat
  • 1kg brick pastry (pastilla sheets)
  • Soy sauce (optional, if available)
Preparation:
  1. In a pan, sauté the chopped onion until soft.
  2. Add the diced bell pepper and carrots, followed by the zucchini.
  3. Allow the vegetables to cook, then add the minced meat.
  4. Season with the ground spices and mix well.
  5. Add 2 tablespoons of soy sauce (optional) and stir until everything is well combined and cooked through.
  6. Remove from heat and add the chopped coriander, parsley, and soaked glass noodles. Let the filling cool.
  7. Use this mixture as a stuffing for the brick pastry sheets, shaping them into briouats (triangles).
  8. Fry or bake until golden brown.
