Ingredients (Serves 1)

  • 120g cooked chicken breast
  • 60g cooked chickpeas
  • 4 cooked Brussels sprouts
  • 1/2 avocado
  • 1/2 red bell pepper
  • 1 tablespoon (level) seed mix
  • A drizzle of olive oil
  • Salt, Pepper

Preparation

  1. Drain the canned vegetables if using.
  2. Remove the seeds from the bell pepper and slice it into strips. (If preferred cooked, grill it briefly in a pan on both sides.)
  3. Cut the avocado into evenly sized slices, removing the skin and pit.
  4. Slice the chicken breast in the same way.
  5. Arrange all the ingredients nicely in a bowl and sprinkle with seeds.
  6. Drizzle with olive oil, season with salt and pepper, and serve.
