Ingredients (Serves 1)
- 120g cooked chicken breast
- 60g cooked chickpeas
- 4 cooked Brussels sprouts
- 1/2 avocado
- 1/2 red bell pepper
- 1 tablespoon (level) seed mix
- A drizzle of olive oil
- Salt, Pepper
Preparation
- Drain the canned vegetables if using.
- Remove the seeds from the bell pepper and slice it into strips. (If preferred cooked, grill it briefly in a pan on both sides.)
- Cut the avocado into evenly sized slices, removing the skin and pit.
- Slice the chicken breast in the same way.
