Lotus Cheesecake 



Ingredients:

Biscuit Layer
• 20 pieces of Lotus biscuits
• ½ cup melted butter

Cheese Layer
• 250g cream cheese (Kiri Spread or any creamy type)
• 1 cup liquid whipping cream
• 3 tbsp powdered sugar
• 2 tbsp Lotus spread

For Decoration
• Crushed Lotus biscuits
• Lotus biscuit slices

Instructions:

Preparing the Biscuit Layer
Grind the biscuits in a food processor until fine, then mix them with melted butter until you get a sandy, cohesive texture. Distribute the mixture into serving cups, press lightly, and refrigerate to set.

Preparing the Cheese Layer
In a bowl, whip the liquid cream using an electric mixer until thick. In a separate bowl, mix the cream cheese, powdered sugar, and melted Lotus spread (microwave for 30 seconds to soften). Blend well with the mixer until smooth and creamy. Gently fold in the whipped cream until fully combined. Transfer the mixture into a piping bag and refrigerate for a while.

Assembling & Serving
Add a layer of the cheese mixture over the biscuit base, followed by a layer of crushed Lotus biscuits. Repeat with another cheese layer and finish with more crushed biscuits. Garnish with Lotus biscuit slices and refrigerate well before serving.
